"What do you eat?"
I get asked this question a lot by people who see the food I post about. In short, my answer is paleo-ish. In reality, the answer is a bit more complicated.
By paleo-ish I mean that 95% of the time I do follow the paleo diet. This all started when I cut gluten products out of my diet. After years (and I mean years, like 16 years) of approximately 5 migraines a week, tests, and medicines that didn't work I eliminated gluten as a last ditch effort to figure out the source. After a couple of weeks with no gluten, I felt a lot better and had no migraines during that period. That was almost a year ago and I have had maybe 4 - 6 migraines since then (and usually after I slipped up and ate something with gluten).
After realizing that gluten was a no from now on, all my research about a gluten - free lifestyle led me primarily to the paleo way of thinking. I was already sad over losing things such as pasta, bread, baked goods, etc. and felt another twinge of sadness when I saw that I also had to give up things like white potatoes, cheese and corn. However, I eventually came to terms with it. I ate the paleo way for a good while and lost 20 lbs without even adding in exercise.
However, as time went on I realized that giving up dairy 100% wasn't for me. So, I added some cheese in on cheat day. As time went on, I added things like cornstarch for my gravy, ate gluten free noodles, and ate beans in my chili.
I now typically try to just stick to clean eating rather than strictly paleo. I still cannot eat gluten for health reasons. I tried to eat mashed potatoes and it messed me up health wise. I'm still not that big on dairy except cheese. I do eat some gluten free pasta.
So, the final answer of what do I eat is:
- Limited gluten free pasta, cheese, rice, and beans
I have learned to eat things I usually didn't/ I learned new ways to make things taste good.
