Tasty Tuesday: Oven Baked Fried Chicken

I was perusing Pinterest when I cam across this recipe. According to caption for the pin, it was supposed to be like KFC's chicken. Now, I love me some KFC chicken and heaven knows, frying is NOT my thing! So, I was eager to try this one out and it went on my next weekly menu. While the chicken was not crispy at all, it was actually very similar to KFC's! This is definitely a keeper as a recipe!

Just Like KFC Oven Baked Fried Chicken

Ingredients:
  • 4 - 5 Boneless, Skinless chicken breasts
  • milk, enough to soak the chicken in
  • 1/2 stick of butter
  • 1/2 tsp salt
  • 1 Tbsp Season All
  • 3/4 tsp pepper
  • 1 c. flour
  • 2 tsp. paprika
Directions:
  1. Place thawed chicken in bowl of milk. Let soak for 30 minutes.
  2. Pre-heat oven to 400*F. Cut butter into small pieces and place in bottom of 9x13 pan. Melt butter in oven and spread over bottom of pan.
  3. Mix together the salt, Season All, pepper, flour and paprika.
  4. Coat each piece of chicken in seasoning mixture. Place in bottom of pan.
  5. Cook for 20 minutes. Flip chicken and cook for another 20 minutes.

Memorial Day: Not Just About BBQ's

I hear a lot about Memorial Day BBQs and opening of swimming pools. And while I think family get-togethers are awesome, I stop to wonder how many people actually realize what today symbolizes. Its not all about BBQs and summer. It's about those who have served our country, and for those who paid the ultimate sacrifice.

I went to school with two young men, Jayton Patterson and Travis Youngblood. Both of these former schoolmates paid the ultimate price for our freedom.

Jayton was a middle school classmate. We were in the middle school band together. I remember him as a quiet boy, yet a jokester. He did not finish high school with me. Instead, he went to a private school and I stayed in public school. He was a Sergeant (E-5) in the USMC. He died in January 2005 in  the Al Anbar Province, Iraq. He left behind a wife and a 15 month old daughter (seen below).

I knew Travis more in passing than anything. I was in the same grade as his older brother. Travis was a Petty Officer 3rd Class and a medic in the Navy. Travis died in July 2005, 5 days after sustaining injuries in Hit, Iraq. He left behind a pregnant wife and a 4 year old son. If you are ever in the mood for a sob story, click here and read the stories written about his widow. Hearing about her giving birth after his death ripped my heart in two.

Here is a picture of his widow at his gravestone in Arlington National Cemetary as well as one of his kids at the gravestone.

I hope that before you enjoyed your BBQ, that you stopped and said a silent prayer for or lifted up in thought, the families of our fallen soldiers, past and present. And that you said a thank you to those who have died for and protecting your freedom as well as those who continue to serve our great country.

The Randomness of WWTK!

Welcome to another edition of We Want To Know Wednesday hosted by Mamarazzi and Crazymama! This week's very random questions were asked by Mamarazzi...
{1} Tell us about your job/daily routine.
      My job is defined as: educator, referee, chef, guidance counselor, etc... I have no daily routine. The only thing that remotely would describe it is: wake up, eat, schooling for kids, eat, clean/schooling for me, eat, sleep, repeat.... Somewhere in between, referee the sibling rivalry fights among the kids.
     
{2} What is your favorite place in your home to relax? (bonus points for a pic)

      There is no where to relax. I am found everywhere I go.

{3} Summer cool treat...popsicle or icecream?
      Depends on my mood. Sometimes an ice cream cone is nice, but I usually eat orange creamsicles! I love those things!

{4} Be sweet to yourself, list 3 things you LIKE about YOU!
      I genuinely care about my friends. I have a sympathetic and caring heart. I love my family and friends.

{5} If someone saw my __________ I would likely die of embarrassment!
      My kitchen! Holy Toledo, it looks like a tornado struck in there. So, give me about an or or so before you stop by.

Tasty Tuesday: Hamburger Steak with Mushroom and Onion Gravy

Since this is my first Tasty Tuesday entry, I'm starting off easy. Because I am all about easy when it comes to cooking. After all, I do cook for 9 people. Each and every day.
This happened to by my husband's birthday dinner back at the end of April. It is one of his favorite meals so I cooked it up for him on his special day. And yes, as much as I cook, I have not mastered making my own gravy. It's on my Kitchen Bucket List though!
Hamburger Steak with Mushroom and Onion Gravy
Ingredients:
  •  1 lb ground beef
  • salt and pepper, to taste
  • 1/2 stick of butter
  • 8 oz. sliced mushrooms
  • 1/2 medium onion, sliced
  • 2 pkgs gravy mix
Directions:
  1. Add salt and pepper to taste to the ground beef. Divide and shape into patties of preferred size.
  2. Prepare patties as if you were cooking regular hamburgers until the are medium rare. {I grilled mine on an indoor grill, but in the frying pan works too). Set aside.
  3. In large skillet (drain hamburger grease if you prepared the patties in the skillet), melt butter over medium high heat. Add onions and mushrooms. Saute in butter about 10 minutes.
  4. Prepare gravy mixture as according to package. Add to onions and mushrooms. Cook a couple of minutes until gravy is smooth.
  5. Place patties in skillet and continue cooking about 15 minutes over medium high heat, until cooked through. KEEP AN EYE ON YOUR GRAVY!
*This recipe serves about 4-5 people.

Serve with Mashed Potatoes.

Mashed Potatoes
Ingredients:
  • 4 lbs white potatoes, washed and diced
  • 8 oz sour cream
  • 1/4 stick of butter
  • salt and pepper, to taste
Directions:
  1. Boil potatoes until soft, usually 20 minutes. Drain.
  2. In pot or large mixing bowl, mix potatoes, sour cream and butter. (Electric mixer or potato masher will work). Add salt and pepper to taste.
  3. Mix until desired consistency. If too thick, add some milk.

This week's Music Monday is "A Song You Can Dance To". My expertise in dancing is very limited. Extremely. Let's just say I have two left feet and no rhythm. Unless I'm intoxicated at which time every one has rhythm. But, here is a song my daughter dances to. She picked this one up from a bunch of MY older friends!

Louisiana Vacation 2012 - Days 1 - 4

Back in February, we took a two- week vacation back home to Louisiana. And we had a blast! We left home in North Carolina around 8:30 AM. It was a long 14 hour drive! I had a little fun with foursquare along the way.

We got to our hotel in Louisiana around 10 pm central time. We settled in for the night and fell to sleep quickly. Even the kids, and they slept pretty much the whole way there.
On Friday, February 17th, I went shopping at my most favorite store. In. The.World. Black and Gold Sports Shop in Metairie. I could live there. Seriously. Connor got his first Drew Brees jersey. Which he completely loves.
After, we went to the first parade of the weekend in Houma - Krewe of Aphrodite. Connor was born 10 days after Mardi Gras 2010 and w e moved away from Louisiana when Connor was 6 months old. He has never experienced Mardi Gras, at all. But, let me tell you he is a true Louisiana boy. He caught on quick! By the second float he already was yelling and shouting "Me!!!!" And he was extremely upset if he didn't get beads or a trinket from every float. He loved this experience!

On Saturday, we were supposed to go to another evening parade, however it rained all day and they postponed it until the next day. Instead we just relaxed and decided what days we wanted to do things.

On Sunday, we got a double parade. First was the originally scheduled parade and second was the parade postponed from the night before.

I Confess.....

I confess...
 that I really wanted to participate in We Want To Know Wednesday, hosted by Mamarazzi and CrazyMama, but by the time I had 5 minutes to work on it, it was Friday. :/


I confess...
 that lately some people are really starting to bug me. They always have, but lately much more than usual. Like the "friend" who wants to play playground monitor and force you to be friends with everyone around you. And like the "friend" that you only keep around for the entertainment purposes of their facebook statuses. Although even those are starting to not be funny anymore.

I confess...
 that I went and read Mamarazzi's Confession post and am laughing at her "Confession flashack" just as much now as I did the day she originally posted it.

I confess...
 that I still despise Algebra as much now as I did in high school. I am half tempted to call every psychologist in the phone book and ask them how algebra is relevant to this career. Just so I'll know. Cause I'm not sure how graphing linear equations with two variables fits in.

 that my severe homesickness has kicked back in again. I did so good since we came home from our trip back home. But, last week the hurt to go home hit me hard. I think I need to just realize that I am and always will be a Louisiana girl {despite the fact I was born in Virginia}.

 that since I started typing this, I have posted on facebook, "gossiped" with friends, pinned on pinterest, worked on Algebra. Then I remembered I was actually writing a blog post!

WWTK #7 -- Bloggin' Style!

Well, it's time for another {late} edition of We Want To Know Wednesday Thursday, hosted by Mamarazzi and CrazyMama!

This week Mamarazzi wants to know all about blogging!

{1} Please describe your blog. Does it fall into one category or many? How has it changed from post one?
      Unique? I don't know how to describe it. It's just a mixture of hodge podge that I like to call me. I post about life, kids, school, food, bloggy linkys, music.... This wasn't the location of my first blog. I originally had a blog, same title and still on blogspot. But, someone hacked into it and locked me out of it. My very first blog post, on that blog, was entitled I am That Girl. Not sure where I was going with my blog at that time. But, hey, whatever. Also on that blog was my entire pregnancy and birth story of my son.

{2} What 3 things do you LOVE about blogging?
        1) Meeting new people. Especially people who can relate to any aspect of my life.
        2) Having a documentation of my feelings and life.
        3) Sharing my stories with others.

{3} What 3 things do you DISLIKE about blogging?
        1) Having to put blogging last in my list of priorities; therefore I don't get to do it as much as I would like.
        2) Crazy people who blog stalk just to criticize you or talk crap to you.
        3) Some blogs that were interesting then went to strictly giveaways. While I love free stuff as much as the next person, I originally followed your blog because I found YOU to be interesting, not the free stuff.

{4} What 3 things do you WISH OTHER BLOGGERS would do? Any tips for them?
        1) Tell your stories, even if you think they are stupid or boring. Somone somewhere will probably shake their head while reading it and think to themself, "Yep, I've been there!"
        2) Make commenting easier for your visitors. Have it open up in a new page so I don't have to back track to get back to your blog. If I am a new visitor, I may comment on several posts in my visit!
        3) Stay real. Do your own thing. Don't try to be like every other blog out there. 

{5} I know we all have lots of blogs we read, but what are 3 blogs your never miss?
       1) My friend, Michele, from high school. I love hearing about Little Miss P growing up!
