Tasty Tuesday: Lasagna Soup

Not the best picture; taken with my cell phone. But, trust me, this is awesome tasting!

  • 2 tbsp olive oil
  • 3 lbs Italian sausage
  • 1 onion, chopped
  • 4 green peppers, chopped
  • 4 cloves garlic, minced
  • 2 tsp oregano
  • 1 tsp red pepper flakes
  • 2 tsp Italian seasoning
  • 2 tsp Sicilian seasoning
  • 6 oz can of tomato paste
  • 28 oz can of diced tomatoes
  • 8 c. chicken stock
  • 16 oz. package raditore noodles
  • shredded mozzarella cheese
  1. Heat olive oil in large pot over medium heat. Add sausage and brown, breaking into small pieces. Add onions and green peppers and cook until softened, about 10 minutes. 
  2. Add garlic, oregano, red pepper flakes, Italian seasoning, and Sicilian seasoning. Cook for a minute or two. Add tomato paste, and stir well. Cook about 5 minutes until tomato paste turns a rusty brown color.
  3. Add diced tomatoes and chicken stock. Stir to combine. Bring to a boil. Reduce heat and simmer for 30 minutes.
  4. Add uncooked pasta and cook until al dente. DO NOT OVERCOOK OR SIMMER TOO LONG (noodles will become mushy if overcooked). 
  5. Spoon into bowls and sprinkle with shredded mozzarella cheese. Serve immediately.
